We serve sweet bread with every breakfast, and one of the most popular is the Morning Glory Muffins, adapted from the McMillan family cookbook in Montana. Ranchers know how to please a crowd!
Cider House Morning Glory Muffins
Mix the following in a large bowl:
- 2 c flour
- 1 1/4 c sugar
- 2 t soda
- 2 t cinnamon
- 1/2 t salt
- 2 c grated carrots
- 1/2 c raisins
- 1/2 c chopped nuts
- 1/2 c coconut
- 1 apple, peeled and grated
In another bowl, beat:
- 3 eggs
- 1 c oil
- 2 t vanilla
Stir wet into dry until just moistened. Fill greased muffin cups 2/3 full. Makes 18 full size muffins.
Bake at 350° for 35 minutes.
We use mini muffin pans or other fluted or unusually shaped tins, and those may take slightly less time. As usually, the type of apple will affect the flavor: use tart or full-flavored apples like Granny Smith, Jonathan, Jonagold, Stayman, etc. rather than, say, Red Delicious.
